Cranberries are great for you! Cranberries anti-inflammatory properties are great for cardiovascular system and the digestive system from mouth to rectum. They promote a healthy gut, which impacts overall health. Your incidence of colds can be reduced due to their immune-system benefits.  And, they contain an amazing combination of anti-oxidants. In cancer they block,inhibit and kill cancer cells. Grab some dried ones to eat year long if you are unable to preserve fresh ones.
Cranberry Bread
3 ¼ cups unbleached flour OR 2 cups unbleached flour and 1¼ cups whole wheat flour
1 tablespoon baking powder
1 cup soy margarine, room temperature
1 ¼ cups natural cane sugar
2 teaspoons alcohol free vanilla flavoring
1-8 ounce carton your favorite soy cream cheese
¾ cup soy or nut milk
1-16 ounce can whole cranberry sauce or 2 cups homemade cranberry sauce
¼ cup lemon juice
1 cup coarsely chopped walnuts or pecans
½ – 1 teaspoon salt (optional)
Spray and flour bread baking pan-regular size or several small ones which are excellent for gift giving.
In a bowl combine flour, and baking powder.  In another large mixing bowl, cream butter and sugar.  Mix in vanilla extract and cream cheese.  Add milk, cranberry sauce and lemon juice.  Beating on low speed of mixer, beat in flour mixture just until blended.  Stir in nuts.  Pour batter into pan(s).  Bake at 350o for 45-50 minutes, or until a wooden pick inserted into center comes out clean. Cool, cut, serve. Yield:1 large loaf or 3-4 small loaves.
Berry Fruit Relish
1 can unsweetened crushed pineapple in its own juice
1 can whole berry cranberry sauce or plain cranberry sauce
OR 2 cups homemade cranberry sauce
1 can mandarin oranges, drained
2 cups frozen, unsweetened sliced strawberries
2 cups frozen, unsweetened blueberries
2 cups frozen, unsweetened raspberries
1 cup chopped pecans
Grated coconut (optional)
Mix all ingredients.  Allow to chill thoroughly before serving.  Excellent as a side dish with a main meal, over waffles or with granola for breakfast.  This is also great to make in the summer time and freeze for later use.  Garnish with optional grated coconut
