Celebrating the Fruitfulness of Summer

Get you some of those amazing summer fruits and turn them into something wonderful!  Good to you and good for you!

Blueberry Cobbler
Your favorite prepared 2 crust pie crust 
4 cups fresh or frozen blueberries (or your favorite fruit – I like apples or peaches)
1/2 cup evaporated cane juice crystals +1/2 cup plain flour
1 teaspoon vanilla flavoring, plus more to taste
1 teaspoon coriander


1 can frozen juice concentrate – apple, white grape or berry blend +1 tablespoon cornstarch
1 teaspoon vanilla flavoring, plus more to taste
1 teaspoon coriander

Prepare crust.  Place 2/3 of the pie crust dough in your favorite 8×8 baking dish.  Save remaining 1/3 dough for top.  Mix fruit and other ingredients.  Pour into pie crust.  Cover with remaining dough and slit OR cut into strips and lattice.  Bake in 350° oven until browning is noted – about 45 minutes.

Serves 8
Variation: Prepare one crust.  Fill crust with fruit and top with crumb topping.  Crumb topping-1/2 cup melted margarine, 1 cup brown sugar, 1 cup whole wheat flour, 1 cup chopped nuts. Mix all ingredients till crumbly and place on top of pie.  Bake as directed.

Blackberry Spread
4 cups blackberries
1 teaspoon lemon juice
¼ cup water
½ cup + 2 tablespoons honey
6 tablespoons cornstarch

Blend cornstarch, water, lemon juice with a handful of berries.  Pour into a saucepan and add honey.  Bring to a boil, stirring constantly.  Add rest of berries and return to a boil, stirring constantly to prevent scorching.  Chill and serve!  YIELD:  About 5 cups

Ginger Peach Tea
2 good size pieces of ginger
12 Caffeine free peach tea bags
1 gallon water
Juice of 2 lemons or limes

Your favorite sweetener to taste – Stevia is great and is calorie-free!

Peel ginger.  Cut into pieces and place in a blender.  Add about 2 cups water and blend until nearly smooth.  Place ginger blend, rest of water and peach tea bags in pitcher.  Let steep a few hours to overnight.  Stir, then strain through strainer or cheesecloth to remove ginger pulp (if you don’t like pulp).  Add lemon or lime juice, your favorite sweetener and more water if necessary to reach desired taste.

Yield: 1 gallon   VARIATION:  For a thicker punch, puree fresh peaches and add. YUM!
